Join Chef Clara Park of eat cetera philly as she teaches you the basics of fish sourcing, butchery and cooking. Topics covered include how to choose the freshest fish, how to fillet a fish, and the best pan sauces and cooking techniques for different varieties of fish. Students will learn to make poached salmon, pan seared trout and whole roasted fish. We will explore various flavor combinations like butter and citrus and what herbs pair the best with fish.
